Greasy Rice

Well, I'm proud of myself.  I actually made rice.  Not just any rice. but, Greasy Rice.  Why am I proud?  I cannot cook rice.  For some strange reason, I have had this inability to cook plain old white rice.  Until this past weekend.  

My husband and I fixed an absolutely delicious roast in the crock pot Friday night.  We basically used my recipe for Roast Beef minus the golden mushroom soup.  I decided that on Saturday I would cook Greasy Rice.  I know it sounds gross but, it really is extremely tasty.  It is also a way to use the leftover gravy/drippings/stock to make part of a meal for another day.  Here we go.  

You'll need:

2 cups gravy/drippings (you can also use baked ham drippings)
1 cup rice
1/2 cup water 
salt to taste

Pour your leftover stock, water, and salt into a small sauce pot.  If you have any, you can also put some of the meat in as well.  You don't want to put much though.  That white stuff is some of the fat that cooked off of the meat.

Yes, this looks a little disgusting but, I promise you, good things will come.

Bring the stock and water to a boil.  When water is boiling, add your rice, reduce the heat, and put the lid on the pot.  Let it cook for about 20 minutes.

As soon as it's done, take it off the heat.  You don't want to scorch the bottom.  Above is what it will look like when it's done.

Yes, this simple recipe is what I'm so proud of because the rice came out perfectly.  As I mentioned before, you can also use the drippings from a baked ham.  If you do this, make sure you use a Ham that is not precooked.  The drippings are better and tastier when you actually have to cook the ham.  Let me know what you think.

Christmas 2013

Well, this year has been crazy and I've been lazy the past few months.  Not so much lazy as I've got so many things going on.  I've started selling Thirty-One in August and have been working really hard on that.  That's one of the reasons that I haven't really posted in a while.  I promise, in the new year, everything will be better and I will be better at posting things regularly.  For now, Merry Christmas and Happy New Year!!  Maybe later, I will post some of the goodies that I've made for Christmas...

Time Passing Too Quickly and Yet Not Quickly Enough

Fall is almost here.  My favorite season!!!  Around my house, we are counting down the days until we head out on a Disney Cruise.  70 Days... It will be a first for me and little monkey man.  We are all so excited!  Unfortunately, fall also kicks off 2 of the busiest seasons for us.  We usually have things planned for almost every weekend from the when school starts until right after Christmas.  We have birthdays, football games, holidays, fall festivals, more holidays, more birthdays, and did I mention more birthdays?  There are at least 8 birthdays between September and December (and that's just immediate family).  There are more than that when you include grandparents, cousins, aunts, and uncle and all such nonsense.  Oh my goodness!  Breath!

Anyway, I'm looking forward to the cooler weather, the bright vivid colors, and that crisp certain smell that fall brings with it.  I kinda got a sense of it the other day.  We really haven't had a very hot summer here in South Kakalaki.  I'm thinking that we may have a very cool and maybe snowy winter coming.  Any predictions?

Well, as I was saying way up there at the top, with Fall, comes a lot of stuff.  One of those is a Fall Festival at Hopewell United Methodist Church in Simpsonville, SC.  I  will have more information on that in a future post.  I will be furiously working on some projects in the next few weeks and I hope to post some pics here, on facebook, and on Etsy when I've finished them.  Keep a sharp eye out. 

I'll also be keeping up with a countdown of sorts until we embark on our cruise in October.  I just found out that the Cruise Line will be hosting a Halloween Party with Trick-or-Treating and everything.  I know little monkey man will be so excited!   Sorry, I really didn't have any pictures for this one.I really can't wait.  Hope you all have a great week!

Ice Cream Sandwich Cake

For a little over a week, I had a very bad headache and found out that I had a migraine.  The only time that I was in as much pain was when I was in labor with my precious little man.  The whole week I was in pain, my wonderful hubby took over all of my roles at the house.  When he got off work, he would pick up our son, fix or pick up dinner, and put our little man to bed.  I couldn't think of a better way to say thank you than to make a dessert for him.  He loves Ice cream and chocolate.  What better dessert than an ice cream sandwich cake.  Chocolate and ice cream all mixed into one yummy dessert.

You'll need:

12 pack of Ice Cream Sandwiches
1 regular tub of Whipped Cream

In an 8x8 pan, place aluminum foil all around and over the edges.  This makes it very easy to clean up.  Place a layer of ice cream sandwiches on the bottom.  You can cut one or two sandwiches in half to fill in the gaps.

Next, use about half of your whipped cream and smooth over your ice cream sandwiches.  Place another layer of ice cream sandwiches over the whipped cream.  

Use the rest of your whipped cream to layer over the top.

Place your pan in the freezer for a few minutes to make sure it sets before you cut into it.

If you want to get really fancy, you could add a layer of chocolate pudding in between the ice cream sandwiches.  I would have done that but, I was still recovering and my niece and I  kinda did this as a last minute thing.  Hope you enjoy!!

Super Easy Roast Beef

My girls are in town this weekend.  My middle sis, her husband, and their two girls.  The BIL is going camping with my hubby and the girls are staying here.  Even though it's summer, it's been raining here for almost two weeks straight and I thought that a roast would be perfect.  My Aunt showed me how to make this several years ago.  I don't remember exactly how she made it but, this is how I've made it ever since.

You'll need:

Boneless Chuck Roast (about 2 lbs. give or take)
1 can golden mushroom soup
1 can beef consomme
1 can beef stock/broth
1 packet of french onion soup (the dry mix)
about 4 medium potatoes
about 1/2 lb of baby carrots

You can add some different types of veggies like bell peppers or fresh onions.  You go with your bad self! 

Preheat your oven to 325 degrees.  Slow and steady cooking is key for this recipe.  Chop your potatoes into about 1 inch cubes.

 Place your chuck roast in a 9x13 cooking pan.  I use a glass Pyrex pan. 

Empty the dry onion mix on top and around the roast.  

Place your potatoes and carrots around the meat in the pan.  Pour the golden mushroom over the top.  You may need to use a spatula to spread it around.  Add the beef consomme and the beef stock.  I promise you won't need any salt in this dish.

 If you're like me, you may like to have some extra roasted veggies.  I add some extras to a small square pan along with my big pan and just divide the juices up.

Cover both dishes with aluminum foil and place them on the center rack in the oven.  Cook for about 3 hours.  The smell will waft all throughout your house.  It is wonderful!!!

Be careful when you take it out of the oven.  Some of the fat cooks out of the meat and will make more juice/gravy in the pan and may slosh over the sides.  It will be very hot.  You will want to let the pan sit for about 10 minutes.  It will still be hot even after 10 minutes.  The meat will come apart just using a fork.

Spaghetti Roll-Up

Can't really remember where I saw this and couldn't find the recipe.  If it looks like yours let me know.  My little sous chef and I made this for supper last night.  

It was yummy!  The hubs and I are not dieting this week  and I thought that we could use something s little different from the usual spaghetti that we have to have at least once a week for the little one.  This was our 4th of July supper.

1 can of Hunt's Garlic and Onion Spaghetti Sauce (Our favorite)
1 lb spaghetti noodles
1lb hamburger meat
about 1 cup shredded mozzarella
1 tube crescent rolls
onion powder

1. Preheat your oven to 325.  Brown meat and add salt, pepper, and onion powder to taste.  Drain and put meat back into pot.  Add spaghetti sauce and bring to a low simmer.

2. Cook noodles according to directions on box.  I used Thin Spaghetti noodles.

3. While the noodles and sauce are cooking, spread your crescent noodles out on a pan that has aluminum foil spread over the top.  You'll need to flatten the whole tube out to about 1/4 inch thick and make sure the seams are pinched shut.

4.  When the noodles are ready, drain and return to pot.  Add all except about 1 cup of sauce into the noodle pot and mix together.

5. Pile the spaghetti noodles and sauce mixture down the length of the crescent rolls.  Leave about a half inch open at the ends.  You may have some noodles left over.  If you're like me and have  little one that only likes regular spaghetti, you can leave that little bit for them.

6.  Pour that left over cup of spaghetti sauce over the top of the noodles.

7.  Spread the mozzarella cheese along the length of the noddles.

8.  You can either roll it up with the ends tucked in or you can make about 8 angled cutsdown each sideof the rolls, about a half inch apart,  and braid them over the top.  If you just roll them, you may want to cut a few vents on the top so that steam can escape.

9.  Place in the oven on the middle rack and bake for about 12-15 minutes or until golden brown.

If you want to get super fancy, you can brush garlic butter over the top before you bake it.  I made some extra sauce and my husband spooned it over the top of the finished rolls after we cut it.  Hope you enjoy!!

Memorial Day Weekend and Waffles

I don't know about ya'll but, I had a wonderful Memorial Day Weekend!  I spent time with Family and Friends every day.  I couldn't have asked for better company and weather.  Sunny all day the whole weekend.  

My son and I went to Bishopville to do some visiting.  We started at my grandmother's house Friday evening.  My sister went and got pizza so we got to spend some extra time without anyone having to cook.  I love going to Grandma's house!  She always has goodies and new recipes to try.  I took some pictures and copied a few down.  She even gave me one that she had a couple copies of.  I love that woman!!!

The next morning, my niece Rosie and I made waffles.  It was my first time making homemade waffles and they were wonderful, if I do say so myself.  I have the recipe below.

After breakfast, we went to Nana's house (My sister's mother-in-law).  Judy is another one of those grandma's that has all kinds of goodies at her house.  And she has a pool to boot.  Alex got to have his first swim of the season.  I swear, my son is a fish.

My brother-in-law David grilled hot dogs and hamburgers for a late lunch.  Getting my kid to eat either one of those is near impossible.  I had to settle with him eating a hot dog bun and some chips.  After that I got to go out with my long time girl Crystal. (If you get a chance, go check her out at Fitness Amongst Chaos with Crystal .)  We went out to Zaxby's and Walmart and did a lot of catching up.  I know, we party hard.

Sunday, Alex and I went and ate breakfast at Grandma's.  That woman knows how to make a spread.  She had grits, sausage, rolls, orange cinnamon rolls, and apple turnovers.  I was in heaven.  I think I had maybe 3 cinnamon rolls...on top of grits and sausage.  

Since the kids did not get to go fishing as planned on Saturday, we went on Sunday.  We went back to Nana's house and picked up another passenger.  Rosie and Lilli's cousin Emma.  So, we had two cars full of girls and David and Alex.  This was going to be interesting.  We picked up some crickets and headed to the pond.  First we stopped at David's uncles house to make sure it was ok that we go to their pond and I discovered the most wonderful place.  This house...

This place had everything I dream of in a house.  Antiques, flowers, dogs, and family.  I fell in love with this house.  I got to talk to David's aunt and found out that all of that yard was nothing but a corn field when they moved in years and years ago.  Bless her heart.  She worked hard to get that yard where it is today.  After exploring for a while, we gathered up yunggins and fishing poles and headed out back to the pond.

Now, I've never really been one to enjoy baitin' a hook but, when you go with your son and three young girls, you kinda have to.  David took Alex off down the bank a little ways away from the wild girls and within 5 minutes Alex had caught the first fish.  I was one proud momma.

He really had no idea what to do with it after he caught it.

He and Uncle David stayed down a little ways but didn't catch any more.  We kept moving down the bank and trying again.  I think by the end of the day, he had just as much fun going barefoot in the shallow spots trying to catch minnows.  While we were there, we had a beautiful view.

After a couple of hours and the girls catching a couple more fish, Alex and I made the 2 hour trip home.  

On Monday, we got together with some more family and had some ribs that my hubby made Sunday night and some more swimming.  Alex was in hog heaven all weekend being surrounded by all his peeps.

Now, on to the waffles.

I found the original recipe over at Darling Doodles.  I love this blog.  Brie is so very creative and talented.  I've adjusted the recipe a little.  I think the came out absolutely delicious.


3 cups all purpose flour
4 tsp baking powder
2 tsp sugar
1 tsp salt
3/4 cup melted butter
4 eggs (whites and yolks separated)
1 12 oz can of evaporated milk
1/2 cup milk.

Start off by melting your butter and setting it aside to cool.  You don't want to add hot butter to your mix.  It will partially cook the eggs.  Not good.  In a medium mixing bowl, mix together all of your dry ingredients.  Flour, baking powder, sugar, and salt.  Set this aside.  With the four egg whites in another mixing bowl, whip the whites until light and fluffy.  You should be able to form somewhat stiff peaks in the egg whites when they are ready.  Mix your evaporated milk, regular milk, and egg yolks into your dry ingredients thoroughly.  Then you gently add your whipped egg whites.  Don't get too rough mixing these together.  The air in the eggs is what helps make these waffles light and fluffy.  Prepare your waffle iron with a little cooking spray on the top layer and about a teaspoon of cooking oil on the bottom.  This will help your waffles be a little more crispy on the outside.  Cook away and enjoy your fluffy goodness.
